We really did plan to have dinner at home Sunday night, had carefully chosen all the ingredients at the Montclair Farmers Market the day before. But then there was that big party Saturday night. Still too hung-over to cook, let’s find somewhere romantic to heal.
The Wine: Tenuta delle Terre Nere Etna Rosato, hair of the dog as they say.
The Food: Fiore Di Zucca, Insalata Fungi & Pizzete Nduja, a perfect hangover remedy.
The Place: Trattoria Salute, Montclair, just what the doctor ordered. And perfectly romantic on a balmy summer night.
Started with, Fiore Di Zucca, first of the season stuffed zucchini blossoms, lobster chunks, guanciale, whipped ricotta, yellow tomato tartar, brick oven roasted plum tomato.
Here is the Tenuta delle Terre Nere the vineyard in Sicily where the wine we enjoyed is carefully produced.
Then, an Insalata Fungi, brick oven roasted skitake-porcini mushrooms, red oak lettuce, truffle oil, butcher cracked pepper corn, parmigiano reggiani
And, Pizzete Nduja, spicy calabrian sausage. crushed tomato, mozzarella, fresh basil, olive oil.

The 2012 Etna Rosso shows a fascinating bouquet with dried herb, balsam tones and beautiful background notes of dried fruit and mineral. The wine evolves quickly in the glass and is really quite remarkable in terms of its intensity. It consists of 98% Nerello Mascalese and a tiny part Nerello Cappuccio aged in oak for up to 11 months. Again, you get remarkable quality with Tenuta delle Terre Nere at impressively low price points. Drink 2015-2022.

Wine Spectator
Fresh and elegant, with a core of ripe crushed cherry and wild strawberry fruit. The chewy tannins impart supple structure and weight, while hints of ground anise, dried thyme and smoky mineral add complexity and linger on the finish. Drink now through 2022. 7,500 cases made.
