Here is another beautiful summer wine cocktail from Beth Jacques, publisher of Food Fashion and Fun.

The Food: Spanish, Mexican tapas, mild cheeses, or cerviche
The Place: Anywhere warm and sunny
Beth has a great eye and taste for "An Affordable Lifestyle" That lets you "Eat well. Dress well. Have fun." and I would add Drink Well.
I have some great Prosecco in my fridge, beautiful Sage in my garden, picking up Pineapple juice today, for a birthday party tonight. This will be a real hit.
Here is her well crafted, easy to make, Pineapple Sage Champagne Recipe
2 tablespoons Pineapple Sage Syrup
Champagne
1 fresh sage leaf, garnish
Add the syrup to a glass.
Fill the glass with Champagne.
Add the sage leaf.
Serve.
Pineapple Sage Syrup
2 cups Pineapple Juice
3 fresh sage leaves
Heat the juice and sage leaves in a small saucepan over the low heat.
Slowly bring to a simmer.
Let simmer for 30-45 minutes. The juice should be reduced down to about 1/2 -3/4 cup. Remove the juice from the stovetop and pour into a container. Place in the fridge until chilled.
Beth likes "to make flavored syrups to go with cocktails. You can make a lot of different cocktails with just one syrup. My favorite is to add a few spoonful’s with champagne or prosecco."
She likes "to make a simple syrup really interesting. I’ve mixed it up with pineapple juice and sage. It’s a unique flavor that can be appreciated all year long."
