The wine tasting theme was "The Exciting Wines of Southern Italy." The food was all to be Italian, Southern Italian. But, a guest brought his special home-made Guacamole. I wondered, would the wines from Sicily and Campania pair with this dish? One did, perfectly.

Cantina del Taburno is a member "Consorzio Agrario di Benevento"(Agricultural Consortium of Benevento) which has supported great wine making in the Benevento Province at the foot of Monte Taburno, since 1901. Cantina del Taburno winery was built in 1972 and dedicated to creating wines true to the region.
The wine grape Coda di Volpe, Tail of the Fox, is an ancient grape used to make wines for over 2,000 years. It has beautiful aromatic properties and becomes a very appealing fruity wine with citrus and tropical flavors with lively sweetness.
This Coda di Volpe is full bodied and very well balanced. Paired perfectly with the rich creamy flavors of the Guacamole. Try it.
