One of our first rules in wine pairing is choosing a wine that comes from the same place as the food. Cavatelli is originally a Sicilian pasta and with sausage you could choose a light or medium bodied red or a white. We chose a white from Sicily, an Insolia or Inzolia as they sometimes call it there, a wonderfully balanced and flavorful grape.

Insolia is a wonderful food friendly wine that is perfect any time or place where you would drink a Pinot Grigio or Sauvignon Blanc. Depending on the wine maker's techniques it can be light and bright or more rich and full bodied.
Most of the wines in mainland Italy are named by the place or DOC, DOCG, e.g. Chianti, Barolo, Soave, etc. but in Sicily wines are usually identified by the grape and then the vineyard.
Another favorite Insolia is by the brothers Cusumano who make wines that they call a "new expression of Sicily."
Insolia is a great wine to have with Italian olives and cheese, seafood dishes, white pizza, vegetarian, garlic chicken, anything with a lighter sauce.
It is very balanced, has no extreme flavors, which makes it a generally popular wine.
It is very delicious and very affordable at $10-$15. Give Insolia a try.
