This is a delicious Mango Mojito Margarita named after my sister in-law Heidi Rae Weistein who is hosting a party, on August 16th, 2008, for the entire family and many friends in honor of Rudy Polack's (my father in-law) 60th anniversary of his 20th birthday. Go Rudy!
Here is the recipe, try it and all your friends and family will say WOW!
It is delicious.
One of the key ingredients requires a nearby Trader Joe's, I hope you have one near you. This recipe is designed to go into a 32oz or larger blender.
Ingredients:
12 oz Trader Joe's Mango Peach Orange Juice
1 1/2 oz Fresh Lime Juice
6 oz White Tequila, Vodka, or White Rum could be used if you prefer
1-2 oz Triple Sec to taste
1 oz Frozen or Fresh Raspberry or Framboise
8 oz Frozen Mango Chunks
6 Fresh Mint Leaves or to taste
Ice to fill the blender
Blend ingredients except the mint to a smooth consistency, add the mint and blend again lightly. If you like a lighter drink reduce the alcohol. I think tequila is best for this new cocktail but not everyone likes tequila. Vodka will make the drink softer, rum more intense. You can play with the color by adding or reducing the raspberry. I like a soft orange color, but more pink may compliment your table setting nicely. It is all about the theater, right?
For a finishing touch add a mint leaf, a raspberry or a rosemary twig, or all three, to the glass when pouring.

YUM! It's happy hour at my house right now (east coast time!) let's try a Heidi Rae cocktail. I will serve some dates stuffed w/ chorizo, wrapped in bacon, do I need to say anything more?
